The history of canned meat

The term „conservation“ originated from the Latin word „converse“, which means preserve.

Even in ancient times, people thought about how to protect food from going off. It is said that during the excavation of the tomb of Pharaoh Tutankhamun, ducks fried and embalmed in olive oil were found in an earthen bowl, whose oval halves were held together with a resinous compound. This preserved food had been lying in the bowels of the Earth for about three thousand years but remained relatively edible. In addition to the Egyptians, the North American Indians were adept at canning food. They pounded dry meat until it was pulverized, mixed it with spices and stored it in leather bags for up to six months. This product was called pemmican.

A need for canned meat that could be produced with ease and in large amounts came to the peak in the era of Napoleon Bonaparte, for whom it was especially important to preserve food to take on long military campaigns. He is considered key to the emergence of popular modern-day products such as canned beef fillet.

The inventor of canned products in their modern form is the French chef Nicolas F. Appert, who proposed a method for the airtight sealing and sterilizing of products directly in containers (originally glass).
