A QUICK GUIDE TO SAUCES GLAZE

Glaze sauces based on balsamic vinegar are traditionally considered one of the most famous dressings of Mediterranean cuisine. UNESCO has included balsamic sauce on the World Heritage list, which once again confirms its cult status.

Description and usage

This sauce has a thick, creamy consistency and comes in a variety of colors, from dark brown to white, depending on the grape variety and the additional ingredients used to prepare it.

Balsamic vinegar sauces are ideally suited for making salad dressings, mayonnaise, and marinades. It is also used as an ingredient in sauces for desserts – balsamic perfectly complements ice cream and fresh fruit salads.

Additional ingredients that complement the sauce bring a piquant twist to the classic balsamic flavor. Jalapeno or Curry add e.g. a spicy kick; they are often added to dressings for meat cooked over open fires. 

Use as a seasoning for fresh vegetables, meat and fish dishes and various salads.

Italians often complete the classic Mediterranean combination, prosciutto and melon, with balsamic sauce.

Jalapeño

Curry

Curry (from Tamil kari) is a spice mixture based on turmeric root. It is traditionally thought to have originated in India, but is now consumed all over the world. Curry has a mild flavor and strong characteristic aroma.

A genuine glaze sauce from Italy is made from 9% Modena balsamic vinegar and 9% curry. 


Basilico

Basil is one of the most popular herbs in the world and is considered the main herb in Italian cuisine. Basil has a pleasant slightly sour taste and delicate aroma. It smells like tarragon due to the presence of essential oils.

A genuine glaze sauce from Italy is made from 11% Modena balsamic vinegar and 8% concentrated basil.
